La Rochelle spoils cooks rotten. The covered market in the old fishermen's quarter of Saint-Nicolas trades every morning, the fishing boats land their catch a few streets away, and the oysters come in from Marennes-Oléron just down the coast.
I shop in the morning of your meal, which is why no two menus are ever quite the same: a whole sea bass roasted over fennel one week, local strawberries and a perfectly ripe chèvre the next.
